The Art of Coffee Processing at Thaita Factory

Harvesting in Kirinyaga happens twice a year: the main harvest from October to December and a smaller fly crop from April to July. Smallholder farmers selectively pick ripe cherries and deliver them to the mill, where the meticulous fully washed process begins.

  1. Sorting & Depulping: Farmers hand-sort cherries before pulping, ensuring only the ripest make it through.

  2. Fermentation: The beans rest in tanks overnight to develop their clarity and structure.

  3. Washing & Drying: After fermentation, they undergo a final wash before being sun-dried on raised beds, allowing for even moisture reduction and flavor concentration.

  4. Final Preparation: Once dried to the perfect 10-12% moisture level, the coffee is milled, sorted, and packed for export, ready to be roasted to perfection at Groundstate Coffee Roasters.
